Here's a recipe for a delicious carrot soup that you can make with a ceramic grater:
Ingredients:
500 grams of carrots
1 onion
2 cloves of garlic
1 piece of ginger (approx. 2 cm)
1 liter vegetable broth
2 tbsp olive oil
salt and pepper to taste
Optional: fresh herbs (e.g. parsley or coriander) for garnish
Directions:
Peel the carrots and grate them into fine strips. Set the grated carrots aside.
Peel the onion, garlic and ginger and grate finely with a ceramic grater. (VIDEO)
Heat the olive oil in a large saucepan over medium-high heat. Add the chopped onion, garlic, and ginger and sauté until soft and lightly browned, about 5 minutes.
Add the grated carrots and sauté for another 2-3 minutes
to intensify their taste.
Pour the vegetable broth into the saucepan and bring to a boil. Then reduce
turn the heat to low and let the soup simmer for about 15-20 minutes until the
carrots are soft.
Using an immersion blender or blender, puree the soup until smooth. If the soup is too thick, you can add a little more broth to get the consistency you want.
Season the soup with salt and pepper and stir well.
Serve the carrot soup in bowls and garnish with your choice of fresh herbs, if desired.
This carrot soup is delicious both warm and cold. You can serve them as a starter or main course and accompany them with bread or croutons, if you like. Bon appetit!
